Our Story

About Baking Sweet Memories


Baking Sweet Memories is a bakery and café built around a simple idea: some of life’s best memories are made around something delicious.


Our story began with cake, but over the years it became about much more than cake.


The foundation of Baking Sweet Memories goes back to England in the early 1990s, where owner Rebecca Smith learned traditional English cake decorating from an experienced cake artist named Phil. His approach emphasized craftsmanship, patience, and understanding not just how to use a technique, but why it worked. Royal icing, fondant, pastillage flowers, sculpted cakes, and traditional cake preparation became the beginning of a baking education that would eventually cross an ocean.


After returning to the United States and later moving to Texas, Rebecca entered a large cake decorating competition in 2000. Her three-dimensional cake earned runner-up placement among hundreds of entries and provided the push to turn years of experience into a business.

Baking Sweet Memories was born soon afterward, with its first wedding cake sold in the spring of 2001.


More Than Two Decades of Sweet Memories


What began with wedding and celebration cakes grew through word of mouth and generations of returning customers.


Over the years, Baking Sweet Memories became part of thousands of birthdays, weddings, graduations, anniversaries, holidays, and ordinary days worth celebrating. Some families returned year after year, allowing us to make cakes for their children from early birthdays through graduations and eventually their own weddings.


Those relationships gave the bakery its name meaning.


We weren’t simply baking cakes. We were Baking Sweet Memories.


The business grew from a home-based bakery into a storefront, later expanded into wholesale baking, and has continued to evolve while maintaining the standards on which it was founded.


The Bakery Today


Today, Baking Sweet Memories is returning as a bakery and café in Huntsville, Texas, bringing together the things we have learned over more than two decades of baking and serving our community.


Our bakery case features the cakes, cupcakes, cookies, cheesecakes, pastries, sweet breads, and other desserts our customers have known us for, alongside breakfast and lunch offerings and a thoughtfully developed beverage program featuring coffee and tea.


The goal is to create something that feels increasingly rare: a neighborhood bakery where you can come in for something made well, sit down for a while, meet a friend, celebrate something important, or simply make an ordinary afternoon a little better.


What Matters to Us


Baking Sweet Memories has always been built on a few principles that have never changed:

Craftsmanship matters. Ingredients and techniques matter. Hospitality matters.


We believe customers should be treated fairly and with respect. We believe food should be prepared with care rather than simply produced as quickly as possible. And we believe a bakery can be more than a place where people purchase food.


It can become part of a community.


After more than twenty years, that remains the purpose behind Baking Sweet Memories: to prepare food we are proud to serve, create a place people enjoy returning to, and continue being part of the memories our customers make around the table.
